Populating FROM field

In Outlook, if you have a new mail message set to display
the FROM field, can you have that field auto-populate
with your name BEFORE you send the e-mail? I know that it
auto-populates AFTER the email is sent.

If there's nothing in the from field, it will send using your default
account. What is it you want to see there?
