Post-Accept, Outlook reverts back to "Tentative"

I have a coworker who is having a problem: Any time she accepts a meeting,
after about a minute, Outlook switches it back to tentative, making her look
very "commitment phobic". Any ideas?

We are using Outlook 2007.
