Go to slide sorter view and click on the first slide. Then, hold down the
shift key and click on the last slide. Now all slides will be selected.
Next hold down the control key and click on the slide you don't want to set
timings for. Now set your timings. Alternatively, select all the slides,
set the timings, select the one slide, and change or remove the timings.

This falls under the aegis of the old joke, "Doctor, doctor, it hurts
when I do this." "Well, don't do that." That is, don't click on the
button "Apply to All Slides." If you don't click the button, then the
settings you change will apply only to the selected slides. This is one
of those odd interface issues since Microsoft did away with many dialogue
boxes for that task pane on the right. Task pane settings don't generally
require a button click to take effect. Note that when I tried this out,
the timings didn't change as soon as I changed them; they changed when I
clicked somewhere outside of the timing box (but not on the Apply to All
Slides button).
