We have word 2007 sp2 and it seems everytime a user opens a doc, it is
searching for something from the old server that we had the templates
on. This server is no longer available and it takes about 20 seconds to
time out before it opens the file. It says in the lower left corner of
the word window (the status bar I assume it is) that it is searching for
this path from the old server, "Press esc to cancel...". If we press
escape, it loads the document immediately.

I tried searching the registry for this old server setting thinking it
was an old setting brought in from the old version of office xp we
upgraded from, but I can't find it. So then I thought maybe it is stuck
in the document itself, but all of our files that I look at do this
behavior. Any suggestions as to how I can stop this from happening
everytime we load a file?

My second question regarding word 2007 is why does use different file
window handling from Excel 2007? If I oprn multiple word files, they
are each in their own word window. If I open multiple excel files, each
excel file has it's own window all contined within the Excel window.

Word is looking for the document template on the (non-existing) server. Click the Office button, and then click Word Options. In the Add-Ins category, select "Template" in the "Manage" list, and click Go. In the dialog box, you can type in Normal, and then click OK.

Regarding the second question, for Word, the option Show all windows
in the taskbar (Office Button--> Word Options--> Advanced--> Display
option set--> Show all windows in the taskbar) controls the number of
taskbar/windows for Word documents. For Excel, the option Show all
windows in the taskbar (Office Button--> Excel Options--> Advanced-->
Display option set--> Show all windows in the taskbar) controls the
number of taskbar/windows for Excel documents.
