Printing, why get Entourage box one day and Apple box next

Can someone screw my head on right? As far as I can remember never
understood this.
I go to print, and sometimes I see the entourage box which ask about photos
and selections, and sometimes I get the basic apple box which has none of
that.

If you try to print a complex HTML message, you are given the simpler dialog
box - this type of message has to be displayed by a different display engine
to normal messages, and in MacOS printing is just a different type of
'display'
