What is the best way for me to send a client a file
without letting them see sensitive information? Also, how
can I print out just the graphic gantt chart?

Inside of Project you must print at least the first
column and the ID column prints as well. Other than
that, if you drag over the divider bar you can print
mostly Gantt Chart on the page. You could use a screen
capture program such as HyperSnap or SnagIt to capture
just the Gantt Chart and paste into a Word Doc.
