How can I have the project deviation, I mean the comparison between real

You need to baseline your project to track the difference. Do a "Tools,
Tracking, Save Baseline". In most cases, you can use the default
settings and just check "OK". Then change your Gantt Chart to the
Tracking Gannt (under Views). There will now be 2 bars for each task,
the colored one on top for your current plan, and the gray one
underneath for your baseline. Any discrepancy is instantly recognizable
to anyone.

This is a god way to see the deviation graphically, there is a way to find
the figures for real and plan progress ?

You can use the Tracking table, at least for a start. If it doesn't
meet your needs, you can modify it to show the data you want. Just do a
"View, Tables" and select the Tracking table.
