Project Server 2007 - Actual Work Protected

Both Microsoft Office Online and the book "Microsoft Office Project 2007 -
Inside Out" talk about serveral "Actual Work Protected" fields.

We are currently in a situation where the time-phased actual work in a
particular project has changed to fractional hours for several assignments.
The Inside Out book tells me that I can "review the protected actuals
submitted by the team member by adding the Actual Work Protected and Actual
Overtime Work Protected fields to the task sheet."

How do I do this? I've tried adding a column to various views in the project
in Project Professional 2007, but I don't see any Actual Work Protected
fields listed. Maybe I'm not adding the column to the "task sheet"? What are
they referring to as a "task sheet"? Any help would be greatly appreciated.

We are operating Project Server 2007 per the requirments necessary to
activate the Actual Work Protected fields as stated at the bottom of the
above link:

"Remarks The server administrator (server administrator: An individual
responsible for setting up fields, views, and reports for an organization and
setting up and maintaining the server and server software.) sets whether your
organization uses protected actuals. To activate protected actuals for the
organization, in the Tracking settings page in Project Web Access, the
administrator selects Hours of work done per day or per week, Force project
managers to use the progress reporting method specified above for all
projects, and Allow only Project Web Access users to update actuals and only
during open reporting periods.

Actuals cannot be protected if your team tracks progress by percent complete
(percent complete: A field that you use to enter or display how much of a
task has been completed. This value is expressed as the percentage of the
task duration that has been completed.) or actual and remaining work
(remaining work: The amount of work, in terms of a time unit such as hours or
days, that is left to be completed on a task. This is calculated as follows:
Remaining Work = Work - Actual Work.), or if you're not receiving your
actuals from Project Web Access."
