In Project Server 2007 can I backup and restore items as specific as a single
project or a single status report, even?

Single project, yes. The archive database can store multiple backup
copies of a project. These can be created automatically on a schedule,
or manually.

Single status report, no, I don't believe so, out of the box.

Thanks for the response, James. Any thoughts on how I would go about getting
status reports out of a Project Server 2007 environment that I don't want
anything else out of? I'll need to get them back into another instance.

I don't have any ideas on that. My guess is that developing a solution
using the PSI programming interface would be the best answer, but
maybe someone else here has a better idea.
