Every time I open Project I get a default Project1. It bugs me and I want to
get rid of it. How do I do that?

You can give it a default project file to open, I believe it's under
Tools, Options, General tab. Or you can open Project by clicking on the
file you want to use rather than opening Project and then opening the
file.

Project1 automatically gets deleted when you open another project. Some
settings can't be changed unless there is at least one project open. If you
still want project1 not to appear you have two options:
1) Select Tools, Options. select the General tab and check Open last file on
startup.
Now when you start Project your last file opens automatically instead of
Project1
2) Write some VBA code in the _Open event to delete Project1
