Protecting content on enterprise fields

Hi Team! Happy Holidays!

Is there any way I can protect the content on a enterprise custom field,
i.e., I have a date field "Agree Upon" which allows the PM to enter the
delivery agreed date with the project sponsor. I want the PM to load the
value and then keep it 'read only' for accountability reasons.
