read-only office 2007

I'm working with Windows Vista and Office 2007. When I open a file in Word or
Excel it opens as a read-only file most of the time. Where can I turn this
off?

Office Proffesional Plus 2007 Beta. I haven't installed the update because it
keeps deniging access to the current user after installation. Is there a
solution for that?
Windows Vista Ultimate
It could have something to do with opening the file from the Windows
Explorer. But that is the way I usally work.
