Is there a way that you can set it up where you will get an automatic read
receipt from a particular contact instead of having to check the "read
receipt" box every time you send to this person?

No. Receipt requests are per-message, not per-recipient.

It's still a message attrribute, though, as I said, and not a contact
attribute.
