remove "automatically update" feature on "insert date & time"

In Word, our office has many files created from a template
where the "insert date & time" feature was set to
automatically update.

Now, whenever you open one of these files, the original
date is gone, replaced by today's date. Is there any way
to repair this on existing Word 2000 documents? Since I
don't believe there's a built-in feature to do this, any
recommendations for an external tool that could help?

Go Insert > Date & Time > on the dialogue that appears uncheck "Update
Automatically".

Do _not_ follow Andre's advice.

In your template press Alt-F9. This will show your field codes. Where you
have the date there will be either a DATE or a TIME code. Change that to
CREATEDATE. Then press Alt-F9. When you create a document based on the
template, the date will be that date. It will stay that date in that
document unless you save it using SaveAs.

And after pressing Alt+F9 a second time, you'll need to press F9 to update
the field.
