Remove builtin administrators

We have 2 - win2k3 servers, one running IIS/Sharepoint with Project server installed, and the other is our SQL2k back end for the Project server. We would like to remove the builtin administrators from sql server. Will this break our Microsoft Project server installation? Our sql services and olap services are running under a domain\user account.
