What does 'clear categories on mail '

Well...it clears the categories (if any) assigned to a mail item. For
instance, I might have a mail item that I've tagged with one or more
categories. If I forward it to you, the categories will follow. I
have a few rules that automatically assign categories but I first run
the rule to clear out any previously assigned categories.
