Rules for spam

I find that most of my spam comes in with an altered address. lets say
my address is (e-mail address removed) then I get mail coming through as
(e-mail address removed) is there a way to put in a rule that if adress is
not exactly = to (e-mail address removed) then move it to the junk email folder.
cann boolean operators be used in a rule?
