Save as .jpeg doesn't save in B&W

I went into Tools / Commercial Printing Tools / Color Printing and chose
"Single Color" because my client can't afford full color printing. I chose
Black as the "Spot color 1" and hit OK. This converted all the color in my
document to grayscale but the problem I'm having is when I go to File / SAve
as and choose .jpg, the .jpg image is showing up with the color - not in
greyscale. Can someone tell me how I can save the .jpg to also be
greyscale, just like what the document shows?

You could change each object in the
document to grayscale by selecting
and go to...Color / Grayscale...on your
Picture Toolbar.

Or you could save the .jpg and then
reimport it and go to...Color / Grayscale...
on your picture toolbar and convert
the whole image at once.

I'm hoping the JPEG isn't intended for the final printing.

And I do believe you can do a batch conversion to greyscale using
IrfanView (www.irfanview.com).

Well, even when I print to PDF, it is saving the color instead of what I
saved in the Color Printing section. Is it supposed to do that or am I
doing something wrong?
