Save defaults for 2007 - change to 2003 -e.g doc or xls?

Hello,

Can I make some change so Excel and Word save documents as the previous
version so the rest of my office can open them in case I forget to choose
the older format. I only have 2 PCs in an office of 50 with 0ffice 2007
and want to make those 2 always save as the previous version. I know how
to change it when saving a document but I want to make it always save as the
previous format without having to change it.
