Saving current Outlook 2000 folders converting to Office Enterpris

I need to ensure my current emails and documents will be converted from my
current version of Outlook 2000 to Excel 2007. How do I go about doing this?
Will it automatically occur in the conversion process?

Outlook & Excel are two completely separate programs there is no conversion
between the two.
Uninstalling or upgrading Outlook will not impact on the outlook data file,
all mail is contained within a single file, by default named outlook.pst.
