saving outlook emails/contacts

I was wondering the exact details of how to save emails
and contacts from Outlook. We are getting ready to be
cut off from one server and switching over to a new one.
We want to make sure we still have all of our old emails
and contact information. How would I save this
information in order to import it into Outlook at a later
time.

What kind of server are you using now, and what are you moving to?
Are you storing your data in PST files?
