Saving web form fields in Access DB

Today, if a customer completes a web-based form for training, the form
information is submitted via an email to an outlook mailbox. We would like to
develop a macro that parses this outlook email content to a Microsoft Access
Database. How would one go about this?

and move to SQL Server

Access MDB is not an acceptable database for websites.

Microsoft has stated this on several occassions
