whenever I scan a document to 2007 word using my H.P. scanner It comes up
with errors in the text. How can I fix this?

This is to be expected. No OCR software is perfect; there will always be
some cleanup required.

Well, if it's a signature, then it's a graphic, not editable text. If you
scanned using OCR, you can't expect reliable rendering of graphics. Try
scanning just the signature as a graphics, then insert it in the text.
