<sigh>. Have you actually LOOKED at the Options functions in a new email
message?

There is a toolbar button for Options. Or use the View -> Options menu.
Pressing F1 while in a program to search for topics as you encounter
them also gives you incremental training in using the product.

If you are using Exchange, a scheduled e-mail will be delivered by the
mail server. If you are not using Exchange then you will need to leave
Outlook so it can actually do anything at the time you scheduled the
item to be sent.
