When using the menu option in an excel spreadsheet to sent to mail recipient,
the email window that opens does not pull in my default signature
information. Is there a way to set it so that the signature information is
used?

The send to option from any other program except Outlook (windows explorer, Office, right click context menu) does not open a fully capable Outlook message and your signature will not appear. You will also notice that it opens a plain text message as well.
