I need to password protect the confidential text of an e-mail. How can I

There is no way to password-protect individual items within Outlook. If you
wish to exchange confidential mail with someone, you should each acquire a
digital certificate and use them to encrypt your mail exchanges. Otherwise,
you can password-protect your entire data store so that when you open
Outlook it prompts you for the password.
