Set Default E-mail

I have a POP3/SMTP account that I want to send all e-mail
out from, and an Exchange account that we use in house.
I set the default e-mail to be the SMTP/POP3 account, But
everytime I restart or logoff, it reset's it back to the
exchange account being the default e-mail account. How
can I stop this.
