set end of spreadsheet address

Sometimes you have a spreadsheet that Excel thinks is quite large. Is there
a way to 'set' the ending address (cell) for a spreadsheet? I know
'Ctrl-End' will show you the last cell, but how do you change it? Thanks for
any help.
