How do I restore the cc, bcc and subject boxes to our
header in new mail? All we see is the "to" box.

Click New to start a new email.

Click on the View menu from the email (not from the main
outlook window). Make sure it expands to show all menu
items. Select the field you'd like to add. They should
remain available for future emails.
