Setting up an email filter in Entourage

How do I set up an email filter? I want specific emails to be stored
in specific folders automatically. It is not junk, just high volume
stuff that I want to look at later.

Go to Tools -> Rules, and click the "New" button. You can then set up
criteria for the rule and actions for messages meeting the criteria, such as
"Move Message". As long as you check the "Enabled" button, the rule will
run automatically when you check your mail.
