Setting up sections to define headers

I'm trying to set up different headers for each chapter of a document. But when I try to insert a new section break, the the "break" option in the insert menu is gray, so I can't use it. This only happens after the third section

Also, what's odd is that all of the pages of the document after that third section break disappear in the "Normal" view, although they are visible in the "Page Layout" view

Something weird has happened to the document after the third section and I can't figure out what.

Sounds like you've accidentally put the content of the document, third
section onwards, into the header or footer itself. You can't insert section
breaks into headers and footers, and they don't display in 'normal' view.
