Setting up "tabable" variable fields/protecting document

Forgive me if I've put this under the wrong category. It's my first time
posting here.

I am trying to figure out how to create a Word form that has fields a user
can fill in, then press [tab] to go to an assigned "next" field and so forth
until done. It would also be great if I knew how to format a field as text,
date, number, etc. I'd also like this form to be protected so that only the
variable fields are editable.
