whats the best way to share calendars in outlook ? - im using exchange
server,
what id like to do is create a shortcut to another persons calendar in the
folder list for easy access
is this possible?

Yep, but that user willl need to set the right permissions on both the
Outlook Today folder as on the Calendar for you. For more info see;

....then, Mark, once that user has given you the requisite permissions, you
can add their mailbox to your Folder List. Here's how:

Tools > Services > Microsoft Exchange Server > Properties > Advanced > Add.
Enter the mailbox name, then OK, OK, OK.

Expand the mailbox to display the Calendar icon. You can drag the Calendar
icon onto your Outlook Bar if you use that instead of your Folder List.
