"Show this number of Recent Documents"

Office 2007. I have set this at the max, which seems to be 50. But only 26
display. There does not seem to be a scroll bar or a way to expand the
window. How can I expand the list to show the full max of 50 file names?

It will show what there is room to display in. In other word it will
list files starting from the "Office Button" to the bottom of the
screen. Increase that distance, and you will see more files.

Thanks Bob...so I take it that the only way to increase that size from a
maximized window is to decrease my resolution for everything...?

Yes, that's how it works, increase the desktop resolution, more lines
will be displayed.
