Signature Colour with email editor

I've been using Outlook 2003 at work for 2 years now, and have always had a
black email signature attach to all emails.

Today, I just turned on the email editor so it's more like Word with spell
check, formatting, etc.

After I turned this on, my signature colour changed from black to blue. If
I go into the email options, it shows my signature as black still. How can I
get the signature back to black in the email???
