You have to either
Change the name in View Navigation
Or Modify the Theme (and save it as a new theme name)
To Change the font size:
Format Theme Modify Graphics (nav bar and fonts tab)
To Change the image:
Create larger images in an image editor and import it into your FP Web (File Import)
- or copy the existing nav bar image from the _themes folder to your images folder and edit them to make them larger
