The implementation of SmartArt in Office 2007 varies a bit by app. For example, in Powerpoint 2007 spellcheck within SmartArt text
is available, in Word 2007 SmartArt it is not and Powerpoint has more effects that can be applied than in Word, such as animation.
I'm not sure what your goal is when you're looking for when you say you want to 'convert' text to SmartArt. If you mean be able to
fill in SmartArt with text you can cut and paste either into the individual shapes or into the outline format in the attached 'Type
your text here' box that appears/hides using the two arrow control pod on the side of the smart art. The design can grow with the
text. If you choose, for example, a SmartArt design such as
'Vertical Picture Accent List',
has three text elements and three pictures, and you paste in 5 paragraphs of text, SmartArt will add more elements, but it won't
inherit the formatting of the text in the Word document..

and then in Word save it to one of the 36 Document Building Block galleries. There are quite a few help pages on customizing the
appearance of SmartArt (not sure if that's what you were looking for as far as 'changing the list'
As for designing/adding your own SmarArt collection items, Microsoft has so far made it simpler to not show 1 or more of the 84
built-in galleries than to add your own. MS has mentioned that they have a tool in work for doing new layouts, but no date that
I've seen on when it might be made publically available or if that would also include new styles, etc. For now, there are a couple
of layouts that others have done that you can download or something you'd need to do on your own creating or editing the .glox
(GraphicLayOutXML) files of SmartArt or possibly through the VBA capabilities in Office.

For looks, I like the Tabbed Arc layout. The calendars are interesting if you don't have a lot of text (i.e. you're comfortable
with a cell phone calendar <g>).
