A regular correspondent has sent a message with an attachment that freezes Entourage as soon as I select it. I can neither open nor delete it. My only escape is to force quit. Other messages with attachments from this correspondent and from others open fine.

Is it possible you have a partial download? What size is the attachment?

One new trick starting with Entourage 2004 is that you can start it up from
default settings - i.e. with Send & Receive All schedule OFF (Manual only) -
by holding down the Shift key at startup - like "Extensions Off" when
starting up your Mac. This allows Entourage to launch without crashing in
situations like this. You could then turn off Preview Pane and see if you
can now delete this message.

Turn off the preview pane and then select the message. Can you delete it
now?

Hope this helps!
