Styles and Formatting should not automatically create new styles .

I can't believe that there isn't any option to stop word from automatically
creating new styles everything you cut and paste text from another document
when it is in a style that doesn't exist in that document.

There really should be an option to get word to ask you if you want the new
style to be added.

Is there anyone else who finds Styles and Formatting frustrating in this way?

When you cut and paste text from other documents it will bring the original
style with it into your document (the styles reside in the paragraph mark at
the end of every paragraph).

Instead, after cutting the desired text, to paste it into your working
document select Edit, Paste Special, Unformatted Text. It will then acquire
the style assigned to Normal, or Body Text or whatever style is your base
style in your working document.
