Resource Assignment – I would like to add Deadline and Priority to my
resource assignments view, is this possible? is there another view that can
let me prioritize tasks across multiple projects?

No, resource assignments views are just that, and assignments don't have
deadlines or priorities (tasks do though). So no, you need a task view.
If you want to prioritiise tasks across multiple projects in one go, you'll
need to open the projects as a master project and do it there.
