template help

I am used to templates in Netscape. can you set up a template with a letter
head? If so what are the steps. I can either insert a graphic which
outlook doesn't seem to support of make a word document to use as a
template. I would like to use this to answer quotes received and sent an
email back with my company logo on the page. Thanks for any help
