How can I change the empty tamplate, which opens everytime, when I open a new file to write. I would like to have spacing after paragraph to be 0 instead of 10pt

Two ways:
- open the Normal template from the Finder, make the changes and save.
- edit the style for normal paragraphs, change the settings there and
ask Word to save it in the template (there's a checkbox).
