How can I change the standard time with out graying out the days. I want to
start my work days from 7:30 to 4:30.

Select the M through F column headers, then set the 7:30 AM to 4:30 PM
working time. Other than doing so manually, there is no other way to change
the standard working time for the Standard calendar. Hope this helps.
