to do bar shows wrong calendar

how do I change the default calendar displayed in the To-Do Bar from the
"Exchange"-mail account one to my "Personal"-mail account?

The To-DO bar will always show the data from the folders in your delivery
location. If you were to change the delivery location to your PST from the
Exchange Mailbox, however, you would download and remove all the data in
your Exchange mailbox and put it in your PST (Personal Folders), hardly an
ideal situation.
