Tracking if messages were sent if I am not copied

I need to track email messages that I send to my manager
for a signature and then he needs to send to another
person for a signature. He does not always copy me back,
how can I know that he sent the message to the other
person?

The only thing you can do is assign your manager a task and drag the e-mail
and document into the task.
