Is there a way to have the default view when opening Word documents b
the Final version instead of Final Showing Markup

You can control this, to an extent, if you first deselect the option to
"Make hidden markup visible when opening or saving"; you'll find the
option in the Privacy Options category of File tab | Options | Trust
Center | Trust Center Settings.
