Tracking Outlook via a Database

I am trying to create a simple tracking process for
emails. To do so I have linked my exchange folders up to
an Access database. Unfortunatley the link/table does
not show all the available fields such as 'category' that
are found on the email's form.

Any idea on how I can see all the fields in the form
using MS Access?

Any help would be greatly appreciated.
