Are you using the native Office 2007 formats? If yes, they are incompatible with earlier versions. Either save as 97-2003 version or advise the recipient to install the Compatibility Pack from Microsoft. A good sender would convert the document and not require the recipient to do anything.
Also, you should probably set this as the default save as format since few folks are using 2007 at the moment.
