Once you "Hide Word" from the "Word" drop down menu, it's impossible to unhide it by clicking on the Word dock icon.

Can't confirm - I have no trouble doing so nor un-hiding by Cmd+Tab.
Versions of Word & OS X as well as type of system would be helpful in trying
to help you sort it out - without that info anything would be sheer
guesswork - although I seriously doubt that it is actually a Word issue.

If I open a document and hide Word, when I click on the Word icon in the dock only Word comes unhidden but not the document-- even though Word says it's still open!

Sounds like you might be running Spaces?
Word 2008 is not compatible with Spaces, until they issue a fix for it.
In the meantime, you may be able to get it to reappear by using Command +
TAB to switch to the application.

I am using Spaces, but I have Word selected in my Spaces preferences to work in "every space."
