Why can't one person in the domain send mail to an
address that everyone else in the same domain can? It
keeps coming back "undeliveable:Returned mail: User
unknown" for that one person.

Check their Contacts or Address book...

They are probably "authenticating" that email
address to an old address that they have in their
address book.
